Good Luck Black Eyed Peas & Greens
Adapted from Paula Dean's Hoppin John recipe, this traditional New Year's recipe is sure to start you off on the right foot.

- Ingredients
- 2 Cups soaked/can/thawed & rinsed black eyed peas
- 2 Cups Rice (the recipe calls for white, I used brown because that's what I had)
- 2 Handfuls chopped up spiral cut ham (because you probably have some leftover from Christmas)
- 4 mini sweet peppers diced (the recipe calls for a green bell pepper, but again this is what I had on hand)
- 2-4 Cloves of Garlic diced
- 1 Yellow Onion Diced
- 3 Tablespoons of Butter
- 3ish Cups of broth or water
- Couple of handfuls of Collard Greens (we used Kale because, you guessed it...that's what we had in the fridge)
- Tablespoon Oil/fat (I used bacon grease, we keep a large jar in the fridge)
- Cook it Up
- In a large pot melt butter and saute peppers, garlic and onion for approximately 5 minutes
- Add ham and saute for another 2 or so minutes
- Add black eyed peas and rice and enough broth or water to cover them. Stir.
- Cook until the rice is fluffy adding liquid and stirring as needed.
- Meanwhile, in a separate pan saute greens with oil/fat until tender.
That's it! Put in on a plate and serve. we typically keep a bottle of sri racha on the table and eat our greens with red wine vinegar. My 1 year old loved the greens and my 7 year old loved the black eyed peas. We hope you enjoy.
